How to serve the best Italian pasta with our Wild Boar Sauce

  1. cook the pasta in boiling salted water;
  2. heat the wild boar tomato sauce in a pan;
  3. drain the pasta one minute before the cooking time indicated on the package;
  4. keep a cup of water used for cooking;
  5. pour the pasta into the pan with the meat sauce;
  6. cook for 1-2 minutes, if the pasta seems too dry, add some water previously set aside;
  7. enjoy the flavor of the Maremma!

The Locanda Rossa's olive grove produces the Extra Virgin Olive Oil 100% Italiano. Early hand-picked olive harvesting to guarantee superior organoleptic quality, the olives are transported to the mill within 8 hours. They are immediately processed by a two-stage continuous cycle mill with hammer crusher and watertight kneader. The extraction process is cold (23°). The 100% Italian EVO oil is sold in a 0.5 l. can bottle.

Aroma: Medium fruity with hints of almond, artichoke and green leaf.
Colour: From green to yellow gold changing with time.
Flavour: Fresh and enveloping on the palate; sweet initially before fading into a perfect balance between bitter and spicy.
Variety: Blend (30% Leccino, 30% Frantoio, 30% Moraiolo, 10% Pendolino and Canino).
Production zone: Capalbio, mild, temperate climate.
Olive grove: Comprising more than 3,000 olives surrounding the Locanda Rossa, controlled and cultivated to cause the lowest possible environmental impact.
Harvest, extraction and yield: Early hand-picked olive harvesting to guarantee superior organoleptic quality, the olives are packed in 20 kg perforated crates and transported to the mill within 8 hours. They are immediately processed by a two-stage continuous cycle mill with hammer crusher and watertight kneader. The extraction process is cold (23°). Yield is about 12 litres of oil for 100 kg of olives.
Preservation: Before bottling, the oil is preserved at a constant temperature of 18 degrees Celsius, in stainless steel tanks under nitrogen to preserve all the organoleptic characteristics.
Format and types: 100% Italian extra virgin olive oil in a 0.5 l can.
